Method

  1. In a saucepan, melt the fat over medium heat.

  2. Stir in flour and whisk for 2–3 minutes to make a smooth roux.

  3. Gradually pour in hot stock while whisking continuously to avoid lumps.

  4. Add soy or Worcestershire sauce and mustard for depth.

  5. Simmer for 10 minutes until thickened to glossy perfection.

  6. Steam Tenderstem® and drizzle the gravy over when serving - the sauce clings beautifully to the stems.
