Tenderstem® Roast Hacks – Gravy but Better!
Method
-
In a saucepan, melt the fat over medium heat.
-
Stir in flour and whisk for 2–3 minutes to make a smooth roux.
-
Gradually pour in hot stock while whisking continuously to avoid lumps.
-
Add soy or Worcestershire sauce and mustard for depth.
-
Simmer for 10 minutes until thickened to glossy perfection.
-
Steam Tenderstem® and drizzle the gravy over when serving - the sauce clings beautifully to the stems.
Chef’s note:
Gravy magic lies in emulsification — the stable mix of fat and water that makes it silky instead of greasy. Think chemistry, but edible and way tastier.

Nutrition analysis of recipes featured on the Tenderstem® broccoli website is calculated by a registered dietitian using McCance and Widdowson's The Composition of Foods, Seventh Edition, but may vary slightly depending on the specific ingredients used. Analyses do not include optional ingredients or suggested accompaniments unless specific amounts are given. If there is a range in the amount of an ingredient, the smaller amount is used. When a recipe lists a choice of ingredients, the first is used.
