Method

  1. Heat up a sandwich or panini maker. When hot, add the Tenderstem® broccoli and griddle for 1-2 min until lightly charred.

  2. Spread the bread with the butter, then turn over one slice so it is butter-side down. Mix the two cheeses together and sprinkle half over the unbuttered side of the bread. Top with the griddled Tenderstem® broccoli, drizzle over the honey, then sprinkle over the remaining cheese. Top with the remaining slice of bread, butter-side facing up.

  3. Transfer to the sandwich or panini maker, close the top and cook for around 3-4 min until the bread is toasted and the cheese melted.

  4. Place the sandwich on a chopping board and cut in half diagonally. Place one half on top of the other and squeeze the corners very gently to watch the melted cheese ooze out. Serve immediately.

  5. Cook’s tip

If you don’t have a sandwich or panini maker, you can use a non-stick frying pan. Brush the pan with a little oil (this will stop the butter from burning). Heat the pan up over a medium heat, add the sandwich and cover with a lid (this will help the cheese to melt). Turn half way through cooking, pressing down on the top lightly. It might take a little longer to cook so check regularly. When the bread is nicely browned, remove from the pan.
