Cook the noodles according to the pack instructions, then drain and set aside.
Heat 2 tsp of the oil in a large non-stick wok or frying pan. Add the eggs to the wok and swirl around the base until covered. Cook for 1 minute, then turn and cook for a few seconds on the other side. Once cooked, turn out onto a chopping board, roll up and cut into ribbons. Set aside.
Heat the remaining oil in the wok. Add the onion and pepper and stir-fry for 3 minutes. Add the Tenderstem® broccoli and chilli and cook for a further 3 minutes. Add the prawns to the pan and stir-fry for 2-3 minutes until just opaque and cooked through.
Add the noodles to the pan with the lime zest, juice and fish sauce, and heat through. Add the egg ribbons, stir and serve with the lime wedges.
