Tenderstem®, Kale, Sweet Potato & Feta Frittata

Healthy, lean, super fast and great protein and three of your five a day!
- Four medium organic eggs
- Tenderstem® broccoli
- Small pack of kale
- One large sweet potato
- 150g of Feta
- Black pepper and oregano and smoky paprika
Steam the sweet potato until tender, remove, then steam the greens! Once a little soft (we want them al dente) beat the eggs in a bowl, add pepper, paprika & oregano to your taste and add the crumbled feta. Add the egg mixture to a large frying pan with a little heated olive oil, then add the steamed veg to the mixture, cook through, folding halfway
