Method

  1. Whisk flour, eggs, milk, and salt into a smooth batter. Rest for 30 minutes.

  2. Preheat oven to 220°C and pour ½ cm of oil into each muffin tin section.

  3. Heat until the oil is smoking hot — this is key for lift.

  4. Quickly pour batter into each well (about halfway full).

  5. Bake for 20–25 minutes until tall, golden, and crisp.

  6. Steam or lightly roast Tenderstem® while the Yorkshires bake.

  7. Serve the puddings stacked high with a handful of Tenderstem®.

    It’s all about gas expansion - the sudden heat turns moisture into steam, inflating your batter like a culinary balloon. Science never tasted this good.
