Method

  1. Preheat your oven to 200°C.

  2. Peel and cut potatoes - aim for rough, uneven edges for max crisp.

  3. Parboil for 10 minutes in salted water, then drain and shake to fluff up.

  4. Heat goose fat in a roasting tray until shimmering, then carefully add potatoes.

  5. Roast for 40 minutes, turning halfway, until golden.

  6. Steam or roast the Tenderstem® in the same tray for the final 8 minutes.

  7. Finish with a sprinkle of sea salt and fresh herbs.
