Tenderstem® Roast Hacks – Vegan but Better!
Method

Whisk all wet roast ingredients, then stir in the dry ingredients until a dough forms. Knead for 2–3 minutes.

Shape into a log, wrap in foil, and bake at 180°C for 1 hour.

For the gravy, cook onions in vegan butter until golden and soft

Stir in flour, then gradually add stock, soy, and balsamic. Simmer until thick and rich.

Steam or roast Tenderstem® for the final 8 minutes of the seitan’s bake.

Slice the roast, pour over the onion gravy, and add Tenderstem® to make the perfect dish.
Chef’s note:
The key here is gluten development - kneading traps air and creates chewy, meat-like texture. Combine that with caramelised onions and you’ve got a Sunday roast that doesn’t miss a thing.
