Cheap but classy and hits all the boxes for nutrition. Warms your inside on a cold day!

Ingredients
  • 300g Tenderstem® broccoli
  • 2 Large potatoes, peeled, boiled and cubed into 1cm cubes
  • 2 tsp olive oil
  • 2 Onions, roughly chopped
  • 250g Streaky bacon, chopped
  • 2 Garlic clove, finely chopped
Method
  1. Peel the potatoes and then boil them until cooked (should still be firm).

  2. Let the potatoes cool before cubing them (1cm pieces).

  3. Trim and boil the Tenderstem® for 3 min - then remove from water and allow them to cool.

  4. Heat the oil in a large frying pan. Add the onion and bacon and cubed potatoes. Cook on a medium heat for about 10 mins, adding the garlic halfway through.

  5. Add the Tenderstem® to the pan. Toss in oil and mix ingredients together. Cook for a couple more mins until the broccoli is completely heated through. Season with pepper, then serve immediately.
