Not your average Broccoli quiche!

This easy to make quiche is perfect for those cold days when something filling, comforting and warming is needed. Plus it’ll fill the home with some fantastic aromas!
- 250 grams of Tenderstem® broccoli
- 6 slices of back bacon
- 1 bell pepper
- 120 grams feta cheese
- 1 onion
- 1 clove of garlic
- 1 tablespoon butter
- Pre made pie crust or use pre rolled pastry (like I do!)
- 4 eggs
- 250 ml of milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
(Optional) Lightly grill bacon for a little crispness.
Preheat oven to 175 degrees C.
Chop Tenderstem® broccoli, bell pepper into small chunks and finely slice onion and garlic.
Over medium to low heat melt butter in a large saucepan. Add onions, garlic, Tenderstem® broccoli and bell pepper. Cook slowly, stirring occasionally until the vegetables are soft. Then transfer this mixture into the pre made piecrust dish and crumble half of the feta cheese.
In a separate bowl combine the milk and eggs and whisk gently. Season with salt and pepper.
Chop and add (cooked or uncooked) bacon to the pie crust and pour egg mixture over vegetables and cheese. Sprinkle remaining feta cheese on top.
Bake in pre-heated oven for 30 to 50 minutes, or until centre has set.
(Optional) Serve with a crisp side salad! Wait for it to cool down and enjoy!
