Am afraid I have a bit of the Mrs Croplley about cooking and like to mix it all up but despite my maverick cooking style I am very conservative about using fresh quality ingredients.

Tasty healthy but a little naughty and happy with chips or a salad as bedfellows

Ingredients
  • 1 Onion
  • Knob butter
  • Tenderstem® broccoli
  • Seasoning
  • Handful smoked salmon cut into strips or cooked flakes if fresh
  • 200gms Fresh breadcrumbs
  • 100gms Flour
  • 2 Beaten eggs
  • Oil to fry
Method
  1. Melt knob butter in pan.

  2. Add one finely chopped onion till softened.

  3. Boil head of Tenderstem® broccoli for few minutes till softened. Chop broccoli and add to onion. Season with salt pepper.

  4. Leave to cool for a few minutes then add handful,of smoked salmon cut into strips omit this if vegetarian.

  5. Add 100gms fresh breadcrumbs and 50gms grated cheese and heaped tablespoon cream cheese.

  6. Mix and chill.

  7. To cook roll into sausage shapes and toss in flour then dunk in beaten egg and then roll in 100gms fresh breadcrumbs and fry in hot oil for 10 mins.
