Love cooking and baking. I don't really follow recipes when cooking, I tend to use them as inspiration and adapt to suit. I don't like complicated recipes or ones that require every bowl and pot in the house to be used.

Combines healthy brocolli with nuts and fruit. It is a salad you actually want to eat and go back for more.

Ingredients
  • Tenderstem® broccoli
  • Red onion
  • Carrot
  • Celery
  • Coconut
  • Cashews
  • Mango
  • Red chilli
  • Orange juice
  • Coriander
  • Crème Fraîche
Method
  1. 2 cups Tenderstem® broccoli blanched and chopped

  2. 1/2 finely sliced red onion

  3. 1/2 cup grated carrot

  4. 1/2 cup sliced celery

  5. 1/4 shredded coconut

  6. 1/4 cup cashews

  7. 1/2 cup chopped mango

  8. 1/2 tsp chopped red chilli (seeds removed)

  9. 3tbsp orange juice

  10. 2 tbsp chopped coriander

  11. 1/2 cup Crème Fraîche

  12. Place all ingredients in a bowl and combine
