Tuscan Style Tenderstem® Risotto

A one-pot Tuscan inspired recipe full of sun kissed vegetables & flavoursome seasoning with an Italian cheese twist.

Ingredients
  • Tenderstem® broccoli (bunch)
  • Two tins of drained tuna
  • Arborio risotto rice for 4 servings
  • Vegetable stock
  • 1 Onion
  • 1 Garlic clove
  • Handful rosemary
  • Handful basil
  • 5 Sweet bell peppers
  • 1 Courgette
  • 1 Cup soya beans
  • 1 tbps Grated Parmesan
  • 1 Mozzarella ball
  • 2 tbsps Soured Cream
  • Olive oil
Method
  1. First, chop all the vegetables up.

  2. Sweat the onions & garlic in olive oil, then add the rice & stir well until rice goes opaque.

  3. Add chopped Tenderstem® broccoli, peppers, courgette, rosemary, soya beans and pour over vegetable stock to cover.

  4. Leave to simmer for 15 minutes until moisture has been absorbed & rice is cooked.

  5. Stir through pieces of torn mozzarella, parmesan, basil & soured cream & serve. Enjoy with Italian wine.
