Tenderstem® Chakchouka

It's a version of the North African dish Chakchouka

  • Olive oil
  • 1 Large Onion
  • 2 Red Peppers
  • 5 Medium Tomatos
  • Pesto
  • 3 Eggs
  • 1 Clove of Garlic
  • Mixed Herbs, Chilli Powder, Cumin and Turmeric
  1. Heat the oil in a large frying pan

  2. Gently soften the chopped onion

  3. Add all the spices to coat the onion

  4. Add the sliced pepper and allow to soften for 5 mins

  5. Add the chopped tomato and pesto

  6. Cover and cook gently for another 5 minutes

  7. Crack the eggs into 3 hollows in the mixture and cook for about 12 minutes dependant on how you like them

  8. Add the chopped garlic

  9. Add the chopped Tenderstem at the last minute to give the dish an extra crunch

  10. Serve with noodles or pasta
