One Pan Tenderstem® Mediterranean

I love cooking but am too disorganised to follow a recipe as I never get all the ingredients. I like to do my own thing but use recipes and pictures as inspiration.

A very quick meal which can be used to impress guests or just give you a taste of the Med at home - all made in just one frying pan so limited washing up!

  • 1 pack of Tenderstem®
  • Red Onion
  • Pepper (any colour)
  • 1 Tin of chopped tomatoes
  • 1 Small carton olives
  • Half bar of Feta cheese
  • Handful of grated cheese.
  1. Fill a large frying pan with boiling water and boil the Tenderstem® for about 10 mins until cooked.

  2. Drain the Tenderstem® but leave about a tablespoon of water in the pan.

  3. Chop the red onion and pepper and add to the pan with the Tenderstem®. Heat until the red onion separates.

  4. Rearrange the Tenderstem® so spaced evenly.

  5. Add the feta cheese.

  6. Sprinkle on the grated cheese evenly.

  7. Place pan under the grill for a few minutes until cheese has started to melt.

  8. Serve with crusty bread :)
