Homemade red fish curry - delicious and healthy

Ingredients
  • Groundnut oil
  • Red curry paste ( garlic, shallots, red chillies, ginger, lemon grass stalk, fish sauce, light brown sugar, lime leaves, lime juice, cumin seeds and coriander seeds - blended in food processor )
  • Coconut cream
  • Veggie stock cube
  • Tamarind paste
  • Fish sauce
  • Tenderstem® broccoli
  • Green beans
  • Cod or monkfish fillets - cubed
  • Can bamboo shoots
  • Thai basil leaves to garnish
Method
  1. Heat oil in wok

  2. Add the red curry paste

  3. Stir in coconut cream, stock, tamarind paste, fish sauce and sugar and bring to boil.

  4. Add Tenderstem® broccoli and green beans and simmer until just tender

  5. Stir in fish and simmer for 3 mins

  6. Ladle into bowls and sprinkle with thai basil to garnish

  7. ENJOY
