Chicken breast stuffed with spinach and cream cheese, with a side of Tenderstem® broccoli.

Ingredients
  • 200g Tenderstem® broccoli
  • Pinch of Salt
  • 2 Chicken breasts
  • 200g Spinach
  • 100g Cream cheese
Method
  1. Butterfly the chicken breast

  2. Spread in a nice thick layer of extra light cream cheese

  3. Stuff full with spinach then close the chicken breast

  4. Place in the oven at 180c for 20 minutes

  5. Whilst this is cooking, bring a pot of water to the boil, with a decent amount of salt. This really brings out the rich flavour of the Tenderstem® broccoli.

  6. I like my veg quite soft so I add the Tenderstem® broccoli and leave it to cook on a low-medium heat for about 8 minutes.

  7. Drain and serve with the chicken, and voila, a delicious, filling and healthy meal!
