Colourful Carbonara

  • Serves 4

Traditional spaghetti carbonara with sweet peppers, broad beans, peas, onions, Tenderstem® broccoli, pancetta and fresh mint & parsley.

  • 2 Sweet Peppers
  • 200g Wholewheat spaghetti
  • 4 Eggs
  • 1 bag of Tenderstem® broccoli
  • 1 Red onion
  • 100g Peas
  • 100g Broad beans
  • Handful of Mint
  • Handful of Parsley
  • A lug of Garlic olive oil
  1. Slice all of your veg.

  2. Then fry the onions with garlic olive oil.

  3. Add the rest of the prepared veg.

  4. Cook spaghetti until al dente.

  5. Drain and add 4 beaten eggs along with all the veg.

  6. Season and add the herbs.

  7. Chilli flakes make a good finishing touch!
