Quick, tasty, fresh and healthy. I love unwinding after a long day of teaching by cooking - I need to look after myself (stop catching all the germs) so it's got to be healthy, but I get home late so it also has to be quick!

Pasta and broccoli - two beautiful ingredients. Need I say more!

Ingredients
  • 250g Tenderstem® broccoli
  • 250g Broccoli (calabrese)
  • 6 Garlic cloves
  • 1 Chilli
  • 6 tbsps Olive oil
  • 200g Pasta
Method
  1. Preheat the oven to 180 degrees. Place the Tenderstem® on a tray with 2 tablespoons of olive oil, 2 crushed garlic cloves, and season. Roast for twenty minutes.

  2. Boil a pan of water and add the broccoli (calabrese) and pasta. Cook according to pasta pack instructions.

  3. While the pasta is cooking, add the rest of the oil to a frying pan. Add the garlic and chilli and fry for a few minutes.

  4. Drain the pasta and broccoli (calabrese).

  5. Mix the pasta, broccoli (calabrese) and Tenderstem® in the frying pan until everything is coated.

  6. Serve up and enjoy!
